As I posted the other day, we’ve been making homemade tacos a lot. Like, a lot. I did a whole pork shoulder slow-cooked into carnitas and we’ve been using up the meat, and we do it up in tacos a lot (sometimes other ways). My favorite thing about our tacos these days is the quick-pickled onions we do. I don’t really follow a recipe but it’s based on this recipe; these days I just slosh some apple cider vinegar over salt and sugar and call it done. Add some pork, lime crema, radishes, jalapenos, and queso fresco, and you’ve got a delicious, delicious dinner.
